Basic Egg Pasta Dough Recipe "Pasta al' Uovo"
(1 pound)
2-1/4 cups all-purpose flour 3 eggses
3/4 teaspoon salt 1 tablespoon olive oil
1 tablespoon lukewarm H2O
Ways
Set the flour on a big floured surface.
Do a well in the middle. Interrupt the eggses into the well. Add the salt, oil, and water. Beat the mixture in the well with a fork.
Applying a fork, gently get down to work the flour into the liquid.
Continue until the dough becomes sticky and hard to work with the fork. Use your custodies to organize the unsmooth dough into a ball.
Reassign the dough to a lightly floured surface.
Knead the dough until it is smooth and elastic, about 10 transactionses.
Cover with a bowl or towel and permit residue for 10 to 15 transactionses.
